Everyday *can* be taco day!

I was kind of bummed that taco day ended I hadn’t even truly celebrated in a manner that would make San Antonio, or any taco lover, proud.  I wished everyday could be taco day.  And then I realized it could.  So today, we had shrimp tacos.

All I did was start with a corn tortilla base (fry them lightly in olive oil on each side or just use a tostada/chalupa shell), added romaine lettuce, my shrimp mix, guacamole, and a couple crispy jalapeno pieces.  This took about 15 minutes to make.

Here’s how to make the shrimp mix:

add some cooked shrimp, salsa verde, pico de gallo (pre-made at my grocery store), a splash of olive oil, sea salt, and a little cumin.   Stir it up until it looks like this.

That’s it.  Here’s a couple ingredients that I just love.  The first one is 100 calorie packs of guacamole.  My hubby won’t eat the stuff, so I hate making a whole batch or opening a full size packet just for me.  This spreads the love around a little more (and my hips).

And check out these beauties from the produce section.  They’re cute, but they pack a lot of punch.  Don’t let ’em fool ya.

So there you have a taco that can be ready in no time  without turning on your oven or stove.
